Ingredients:
2 cups of grated zucchini
2 cups of all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1 cup white sugar
1 cup brown sugar
3 large eggs
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup chopped walnuts
Directions:
Turn on your oven to 350°F (175°C). Note: Be sure to grease and flour a 9×5 inch loaf pan.
Mix together the flour, baking soda, baking powder, salt and ground cinnamon in a big bowl.
In a separate bowl, combined eggs, vegetable oil and vanilla until creamy. Added both sugars.
Add the dry mixture to wet mixture and mix until thoroughly combined. Stir in the zucchini and walnuts.
Carefully spoon the batter into your loaf pan and bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
Serving & Storing
Allow your zucchini bread to cool for 10 minutes, then remove from the pan and finish cooling on a wire rack. Cut into slices and eat with a cup of coffee or while enjoying your best bed-time tea. Keep in an airtight tin for up to one week, but it’s unlikely that you will need this much restraint.
